Zucchini Bread

Loaf pan bread, moist, delicious

Total Time:
Prep 15 minutes

Ingredients:
3 cups grated zucchini
3 eggs
2 cups sugar
1 tsp vanilla
1 cup vegetable oil

Mix all these together

3 cups flour
1/2 tsp salt
1/2 tsp ground cloves
1 tsp baking soda
1 tsp cinnamon
1/4 tsp baking powder
1 tsp ground ginger
Mix these together

Directions:
Add the dry to the zucchini mixture. Blend well. Preheat oven to 325 degrees.
Divide mixture evenly into 2 aluminum baking pans approximately 8x4x2 1/2.
Bake for 1 1/2 hours or until toothpick inserted comes out clean.

Cook's Notes:
I check at about 1 hour 15-20 minutes Depending on the oven this may be all the time you need.
I wrap these in foil and freeze them. They freeze well and defrost quickly.
