Holiday Sweet Potatoes

8 Sweet Potatoes

Ingredients:
3 cups cooked sweet potatoes
2 beaten eggs
1/2 cup sugar
1/2 stick butter
1/2 cup milk
1/2 teaspoon salt
1 1/2 cup vanilla

Directions:
Add eggs, sugar, butter, milk, salt and vanilla to mashed potatoes. Mix well. Place in baking dish. Cover with marshmallows. Bake at 325 degrees for about 30 minutes.

Cook's Notes:
Nice and smooth. You can eliminate the marshmallows if you wish.
